Nose
A wine which winemaker Alessandro Ceretto feels is the ‘most academic’ offering he makes from the DOCG Barbaresco, the 2020 Asili has an open bouquet of red & purple flowers.
Palate
'A tannin structure that is silkier and more unilinear’ than other Ceretto offerings from the same appelation. Hailing from a hilltop vineyard or ‘bricco,’ this wine is incredibly long on the palate and its well integrated acidy will insure excellent long bottle aging.
Growing Conditions
If there is one vineyard that could be considered the absolute standard from the town of Barbaresco, this would be Asili. Known for producing wines with consistent finesse and power, Barbarescos from Asili are also known for their great elegance and longevity. The Asili vineyard area owned by the Ceretto
family is located behind the flagship estate that Bruno & Marcello Ceretto founded in 1973. Pictured on the wine’s label, the vineyard is south-southwest facing and reaches up to 290 meters above sea level at its peak, or ‘bricco’. The soil here is marked by the heavy presence of Marl from Santa Agata Fossili and
due to the vineyard’s specific undulations and microclimate, it is considered a standalone pocket of production. The grapes from this unique site have been vinified separately as a single vineyard since the early 1970s and is one of the Ceretto family’s most well-known crus.

Winemaking
Ceretto’s organically-grown Nebbiolo goes through a balanced fermentation with native yeasts in stainless steel tanks. Alcoholic fermentation is followed by a 20-25 day maceration and malolactic fermentation is performed in 300L French oak barrels immediately following harvest.
Aging
Upon completion of ML, the wine is then aged for two years in large 2050HL oak casks. In addition to barrel aging, the wine is also aged for a minimum of one additional year in bottle before release, in accordance with DOCG Barbaresco aging laws.
