Nose

On the nose a beginning represented by blond notes such as brioche and freshly baked bread, slowly lets express a broad bouquet made of white flowers, acacia, vanilla and white pepper.

Langhe e Monferrato

The vineyards of the supply chain are located on the hilly ridge from Alice Bel Colle to Santo Stefano Belbo via the surprising hills of Mombaruzzo, placed at an altitude between 250 and 400 meters above sea level.


Harvest

Grapes are harvested in the fi rst decade of September.

Winemaking

After pressing the clusters and cold static decantation, inoculation of selected yeasts takes place and fermentation up to 5.5 degrees alcohol. Maturation of the Cuvée for seven months in stainless steel on its own yeast.Maturation on the lees minimum 18 months and bottle maturation minimum 6 months.

Appearance

Straw yellow with golden reflections, with fi ne-grained perlage and great density.

Food Pairing

Dry pastry dripping with cream lends itself to the provocative idea of serving it with blue cheeses or very spicy cuisines.
