Manual harvest in the second ten days of September. Soft pressing in press. Fermentation takes place at low temperature (14-16° C) and is interrupted and less than half (5% alcohol) to preserve part of the grape sugars.

Food Pairing

Velvety and inviting when paired with the typical hazelnut cake, various types of tarts and fine pastries, it is surprising when paired with blue cheeses.
