Winemaking
Pressing of the bunches and storage of the must in steel tanks at 0°C. When necessary, start the fermentation in an autoclave for about a week at a controlled temperature of 18-20°C, taking care to conserve part of the overpressure due to fermentation so as to give the classic foam to the finished wine. Racking and preparation for bottling.
Aging
This wine no needs aging.
Food Pairing
Perfect with desserts, but also with spicy foods or as an aperitif. It is a wonderful summer drink thanks to its low alcohol.
