Nose

The bouquet is broad and intense, with predominant notes of golden apple, sage, peach and litchis, accompanied by more delicate hints of acacia flowers, pear and orange peel.

Palate

The palate is striking for its pleasant smoothness accompanied by a balanced acidity and low alcohol content, making it a very enjoyable drink.

Growing Conditions

Canelli is exclusively produced in the most vocated aerals of the historic municipalities of the "Moscato d'Asti" appellation: prestigious vineyards where soil qualities and exposure, combined with reduced production and more restrictive quality parameters, enhance its aromatic typicality and endow it with such organoleptic richness as to guarantee its surprising longevity.

Winemaking

Grapes are harvested at a high degree of ripeness, exclusively by hand, then arrive at the winery intact and are quickly crushed and gently destemmed to extract only the noblest and most aromatic fractions from the skin and the outermost part of the berry. The must is immediately refrigerated pending the subsequent partial fermentation in an autoclave so that the carbon dioxide, which gives the lively froth, remains partially dissolved in the wine. Fermentation is then stopped by refrigeration so that about 140 grams per liter of sugars remain.

Appearance

The perlage is fine and persistent. The color is straw yellow with reflections turning to golden

Food Pairing

Its distinct orange blossom (zagara) fragrance pairs well with fruit tarts and small pastries. Thanks to the very pleasant balance of natural grape sugars (50% fructose, 48% glucose and 2% minor sugars), gentle acidity, vitamins, and trace elements extracted from the soil, it is an ideal drink for quenching thirst and, in particular, for refreshment after sports activities.
